 1 large aubergine
 ¼ tsp turmeric
 ¼ tsp chilli
 ½ tsp dhaniya
 ¼ tsp salt
 1 ½ tsp sugar
 ¾ tsp flour
 2 tbsp mustard oil, or 1cm deep in pan
 2 eggs (optional)
